Should not cause any problems with the operation of the bike, but why are you removing them and if you are ... are they for sale?

Just my opinion/observation but having the connection between the wife/passenger and myself is also a safety feature. She is able to warn of vehicles that I may not have noticed or mentioned which appear to be or could put us in danger. Fast moving side road traffic, animals running towards the road even debris/rubbish that may be laying along the road or blowing around.
The cruise is nice when traveling long distances and the radio is nice for entertainment. I know that there are options which would replace the radio but the safety isn't quite as easy to replace!

Just because they are there, it don't mean you have to use them, removing them will greatly reduce the value of the bike if you try to sell or trade it in, the C.B. alone is getting rare. The cruise is priceless on long trips. Pete can upgrade your radio with a I-Pod jack. I would leave it all on the bike myself.
