I was looking through the parts lists and I can not find a part number for the rubber cover on the oil pressure sending unit no matter where I look. Does this item have a part number, or, is it considered part of the switch itself and can not be obtained separately?

Probably not available seperately. I believe its considered part of the wiring harness.
